Honest Toil is a small collaborative project, working with a network of small-scale growers in Kyparissia, Peloponnese.
Harvest here is far from the big-scale production of most olive oils, as everything is picked by hand, and properly cold-pressed within hours at the local press which results in the fantastically low acidity.
The acidity of this batch is impressively low, between 0.2%<0.3%, (<0.8% being the legal requirement to qualify as "extra virgin") so it really is something special.
The result is aphenomenally raw and green tasting extra virgin olive oil, with a light peppery spice and flavours of fresh cut grass - all from the recent December harvest... so as fresh as olive oil can be!
The oil is "agoureleo" early harvest, solely from Koroneiki olives, picked before turning from green to red/black. Koroneiki olives are the olive variety with the much-coveted highest Polyphenol content, so the healthy stuff that reduces risk of heart disease, stroke and type 2 diabetes… it’s seriously impressive oil.
